These Brownie Energy Bites are a no-bake snack that comes together in just 15 minutes and makes 48 bites. The base is built with chopped dates, quick oats, PB2 powdered peanut butter, unsweetened cocoa, and maple syrup… all mixed together and rolled into tablespoon-sized balls. They are labeled a kids favorite on the recipe card and store well in an airtight container in the fridge, making them a great grab-and-go snack to have on hand throughout the week.

Ingredients

  • 1 ยฝ Tbsp maple syrup
  • 220 g dates chopped
  • 80 g powdered peanut butter mixed with water to the ratio on the label
  • 15 g unsweetened cocoa
  • 200 g quick oats

Instructions

  • Add the dates, quick oats, powdered peanut butter mixed with water according to the package ratio, unsweetened cocoa, and maple syrup to a large bowl.
  • Mix everything together until fully combined. The mixture should be sticky and hold together when you press a small amount between your fingers. If it feels too dry, add a small drizzle of maple syrup or a splash of water and mix again.
  • Using a tablespoon, scoop out portions of the mixture and roll them between your palms into balls. Place them on a parchment lined plate or baking sheet as you go.
  • Once all the bites are rolled, transfer them to an airtight container and store in the fridge. They are ready to eat right away but firm up nicely after about 30 minutes in the fridge.

I NEEDED something sweet. It did not matter what my Macros looked like. They did not matter what I had prepped. I needed something sweet and then I stumbled upon a mix similar to this… that I had to change up just a little bit to fit my own needs… but then this is what came out of it.

Brownie energy bites that taste like dessert, take 15 minutes to make, and no oven required.

These have become one of my go-to things to have prepped and ready in the fridge during the week. They are the kind of snack that works for everyone in the house, which if you have kids you know is not always easy to pull off. They grab one on the way out the door, you grab one between meetings, and nobody is complaining. And they didn’t upset my stomach before I would head out the door for a run… so that’s always a plus!

The chocolate flavor comes from unsweetened cocoa and the sweetness comes from the dates and a little maple syrup, so there is no refined sugar involved. The PB2 adds a subtle peanut butter note without making them heavy, and the oats give them enough body that one or two actually holds you over.


What You Need to Know About the Dates

The dates are what hold everything together, so the condition they are in matters. If you are using fresh, soft Medjool dates they will mix right in after chopping with no extra steps. If your dates are on the drier side, soak them in warm water for about 10 minutes first and then drain them before adding them to the bowl. Skipping this step with dry dates is usually why energy bites end up crumbly instead of sticky and rollable.

Make sure they are pitted before you chop them. It sounds obvious but it is easy to miss one.


Making and Storing Them

Everything goes into one bowl and gets mixed together, so cleanup is minimal. Once the mixture is combined and sticky, scoop tablespoon-sized portions and roll them between your palms into balls. They do not need to be perfect.

Store them in an airtight container in the fridge. They are ready to eat right away but they firm up nicely after about 30 minutes and that texture is worth the wait if you can manage it. They will keep in the fridge for up to a week, which makes them a great Sunday meal prep item to have ready for the whole week ahead.
