Lemon Garlic Chicken

Lemon Garlic Chicken

Ingredients
- 5 lb whole chicken
- 3 tsps thyme fresh
- 1 meyer lemon
- 3 cloves garlic
- 1 tablespoon extra virgin olive oil
- 1 tsp kosher salt
- 1 tsp black pepper
Instructions
- 1° Preheat the oven to 425F and prepare a roasting pan with a rack.
- 2° Rinse off the chicken and remove the giblets.
- 3° Stuff the chicken with half of the thyme, 1 lemon halved, and garlic cloves.
- 4° Tie the chicken’s legs together and place the chicken on the rack.
- 5° Brush the top of the chicken with the olive oil.
- 6° Season the chicken top with thyme, salt & pepper.
- 7° Bake the chicken for 90 minutes.
- 8° Rest the chicken for 15 minutes.
