Lemon Garlic Chicken

Ingredients

  • 5 lb whole chicken
  • 3 tsps thyme fresh
  • 1 meyer lemon
  • 3 cloves garlic
  • 1 tablespoon extra virgin olive oil
  • 1 tsp kosher salt
  • 1 tsp black pepper

Instructions

  • 1° Preheat the oven to 425F and prepare a roasting pan with a rack.
  • 2° Rinse off the chicken and remove the giblets.
  • 3° Stuff the chicken with half of the thyme, 1 lemon halved, and garlic cloves.
  • 4° Tie the chicken’s legs together and place the chicken on the rack.
  • 5° Brush the top of the chicken with the olive oil.
  • 6° Season the chicken top with thyme, salt & pepper.
  • 7° Bake the chicken for 90 minutes.
  • 8° Rest the chicken for 15 minutes.
