Instructions
1° In a large pot, melt butter over medium heat.
2° Add chopped onion and cook for 5-6 minutes.
3° Add chopped ginger, broth and carrots
4° Bring to a boil on high heat; cover and lower heat to simmer for 30 minutes.
5° Add the cream cheese and blend with an immersion blender.
6° Remove from heat and season with salt and pepper to taste.
