Instructions
1° Preheat the oven to 350F. Spray 12 muffin openings each with oil spray.
2° In a large bowl, combine the almond milk and the eggs.
3° In a separate bowl, combine the pancake mix and the protein powder.
4° Combine the dry the wet ingredients.
5° Pour the batter into the muffin pan evenly and spoon a tablespoon of frozen blueberries on each muffin. Bake for 18 minutes.
6° Allow the muffins to rest for 10 minutes before placing on the cooling rack.
