Ingredients

  • 1 lb chicken breast
  • 1/4 cup barbeque sauce honey
  • 4 eggs hard-boiled
  • 1 bag salad mix southwest
  • 1 bag carrot sticks
  • 4 oz cheddar cheese medium, block
  • 4 tortilla wraps
  • 1/4 cup southwest dressing

Instructions

  • Place the chicken breast and honey barbecue sauce in the crockpot. Cook on low for 6 and a half hours. Once done, remove the chicken and slice it into strips or shred it depending on your preference.
  • While the chicken is finishing, cube the cheddar cheese block into bite-sized pieces and set aside.
  • Empty the southwest salad kit into a large mixing bowl and toss together according to the package instructions.
  • Lay a wrap flat on a clean surface. Scoop half a cup of the southwest salad mix onto the center of the wrap. Add 100 grams of the cooked BBQ chicken on top of the salad. Fold in the edges of the wrap and roll it tightly from the bottom up. Slice in half.
  • Place one wrap half into a bento box. Add one hard-boiled egg, 28 grams of cubed cheddar cheese, and 100 grams of carrot sticks alongside it.
  • Seal and store in the refrigerator until ready to eat. These will keep for up to 4 days.
  • Repeat with remaining ingredients to build additional wrap halves and a separate snack container of cubed cheese for the rest of the week.

Remaining ingredients were used to create an additional 6 wrap halves & a snack container of cubed cheese. They were individually packaged and stored in the refrigerator.
